BBQ's are a distinctly summertime experience, and chef Michael Motamedi has some pizza recipes you can use on the grill.
Pizza dough ingredients:
- 500 ml water,
- 1kg flour, 20g salt,
- 2g yeast.
Instructions:
- Mix everything together.
- Portion, cover and let rest overnight in the fridge.
Ingredients for a spicy tomato sauce:
- 1 large onion,
- 1 head of garlic,
- 2 whole Italian chilis,
- 3L canned tomato.
Instructions:
- Cook onions, add garlic and chili and cook further, add tomato and simmer for 1 hour.
- Season to taste and blend everything.
Ingredients for garlic olive oil:
- 1 head of garlic,
- 1L olive oil.
Instructions:
- Cook garlic to a golden brown color with a quarter of the olive oil on medium low heat until tender to the touch.
- Turn off heat and add remainder of oil.
- Allow to cool completely before blending.
Toppings: Anything and everything you like.
I will be using stachatella cheese, basil, and fresh chilli for one.
And Arugula, prosciutto, parmesan cheese for another.

Tomato sauce and stracciatella
- Sprinkle the pizza dough with flour, place it on a floured surface, make a small crust. Turn over and stretch out to the size you like.
- Place the stretched out dough on a HOT BBQ. Once it starts to bubble, turn it over. Almost a minute on each side.
- Take off grill, spread the tomato sauce evenly on the cooked pizza dough
- Dollop stracciatella cheese on top of the sauce
- Place basil leaves evenly around pizza
- Sprinkle the fresh chilli slices over the entire pizza
- Salt and oil the pizza (specifically the cheese)
- Slice the pizza and serve

Arugula and prosciutto
- Sprinkle the pizza dough with flour, place it on a floured surface, make a small crust. Turn over and stretch out to the size you like.
- Place the stretched out dough on a HOT BBQ. Once it starts to bubble, turn it over. Almost a minute on each side.
- Take cooked dough off the grill, brush the olive oil on top of the cooked pizza dough
- Spread arugula evenly on top
- Place prosciutto on top
- Finish with slices of fresh parmesan
- Slice the pizza and serve

- Sprinkle the pizza dough with flour, place it on a floured surface, make a small crust. Turn over and stretch out to the size you like.
- Place the stretched out dough on a HOT BBQ. Once it starts to bubble, turn it over. Almost a minute on each side.
- Take off grill, spread the tomato sauce evenly on the cooked pizza dough
- Spread grated mozzarella cheese on top of sauce
- Place desired toppings (example: pepperoni, mushrooms, green peppers ect...)
- Sprinkle some more cheese on top
- Place back in BBQ on top rack, close door
- Once cheese is melted take off, slice and serve
